Cheddar Chive Biscuits

Tasty Cheddar Biscuits

Tasty Cheddar Biscuits

4 cups flour

1 Tablespoon baking powder

2 teaspoons baking soda

2 teaspoons salt

1 cup shortening

1 cup shredded cheddar cheese

2 Tablespoons thinly sliced chives

1 ½ – 2 cups buttermilk

 

Place flour, baking powder, baking soda, and salt in the work bowl of a food processor.  Pulse the dry ingredients a couple of times to mix them.  Add the shortening to the flour mixture but not in one piece.  Distribute it rather evenly around the bowl.  Pulse a dozen times or so until the shortening and flour form a crumbly mixture.  Place the contents of the food processor into a mixing bowl.  Toss in the cheese and chives “fluffing” them into the flour mixture with a fork.  Add 1 ½ cups buttermilk and gently incorporate.  If the dough seems to dry all part to all of the remaining buttermilk.  Turn the dough out onto a lightly floured surface and gently kneed a few times to make smooth dough.  Roll out to ½ to ¾ inch thickness and cut with a biscuit cutter.  Put the biscuits on a silpat or parchment lined baking sheet and bake at 400 degrees for 10-12 minutes.  When nicely browned remove from the Cheddar Chive Biscuits from the oven and brush the tops with melted butter.  Makes about 12-15 biscuits.
