Many thanks to Barb at The Honeybee Inn for inspiring this variation to her recipe.
For each serving cut the top off one roll and scoop out the soft bread interior to create a shell. Put one tablespoon of shredded jack cheese in the shell and top with one slice of cooked crumbled bacon. Pop this into the oven for 2 or 3 minutes just to warm the cheese. Remove the shell from the oven and break one fresh egg into the bread bowl. Top with a teaspoon of heavy cream, salt, pepper, and a generous sprinkle of fresly chopped herbs or a half teaspoon of pesto. Put another Tablespoon of the shredded jack cheese on top and then bake at 350 degrees for 20 – 25 minutes.
