Classic Oatmeal Chocolate Chip Cookies with Walnuts
1/2 cup butter flavored shortening
6 Tablespoons butter
3/4 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old fashioned oatmeal (Not quick or instant)
1 cup chocolate chips
1/2 cup chopped walnuts
Heat oven to 350 degrees. In a large bowl beat the shortening, butter and sugars until creamy. Add eggs and vanilla and beat well. Combine the flour baking soda, salt and cinnamon and add to the creamed mixture. Combine thoroughly. Remove from the mixer and stir the oatmeal, chips and nuts into the mixture by hand. Dough will be stiff.
Drop dough by rounded tablespoons onto ungreased baking sheets (we use a small ice cream scoop). Bake 8-10 minutes or until light brown and still soft. Let cool for a minute and remove from cookie sheets. Makes about 2 1/2 doz large cookies or 4 dozen tea cookies.
Freely substitute other flavored chips, dried fruits,and nuts for the choc chips and walnuts.
